Instructions. Wash, peel, core and slice pears, I used my apple peeler. Add 2 quarts of sliced pears to a large stainless steel pot and add 1 1/2 cups of sugar. Remove from heat; stir in brown sugar, allspice, and nutmeg. Pack pear preserves into hot, sterilized jars, filling to within 1/2 inch of the top.
